Everybody knows ham are typically made with the back leg of a pig. However, some ham are made with pork butt or Boston Butt. The thing is, the butt is not where the butt you might think it is.
Solisege’s specialty hams are made with fully boneless leg of the pig and do not contain any meat glue. When preparing the meat, we remove all the bones in the ham and trim off access fat before curing it in a salt brine.
The brining process is where we infuse different flavours using herbs, spices, sugar, and salt. Once it’s done, selected hams are placed in moulds and some are placed in ham nets to maintain their shape while it goes through the cooking and smoking process.
Then, the cooked hams are sliced to a 3mm thickness and vacuum packed. All hams have a minimum shelf life of 4 months when they leave the factory. Make sure to store them at a consistent temperature of 0-4C to maintain their shelf life.
However, most house fridges cannot meet this standard due to frequent opening of the fridge door. Therefore, we recommend you to store the hams in the freezer if you are not consuming them within a week.
